Crawfish at Jazz Fest

Secretly we think many of the visitors to the Jazz and Heritage Festival come for the food just as much as they come for the music.

Some might own up to it after it was announced that this year’s newest dish offered at the fest is a Cajun Duck Po-Boy.

For some of us, the festival’s different offerings of crawfish preparations are almost mind boggling. There are at least 19 different crawfish dishes served at the fest!

You could start with two favorites, Crawfish Sacks and Beignets. Others crave the Crawfish Enchiladas and Crawfish Pies. Besides these, to have a proper crawfish dinner, you would want to start with a Crawfish Remoulade.

From there you could go to the soup course, Crawfish Bisque or Crawfish, Spinach, and Zucchini Bisque. There are also a trio of appetizers to stir your heart, like Crab & Crawfish Stuffed Mushrooms, Fried Eggplant with Crawfish Sauce or a Crawfish Stuffed Puff.

Next you can have Crawfish Bread or a Soft-Shell Crawfish Po-Boy, and for the more adventuresome, a Crawfish Sausage Po-Boy. Make sure to save room for three pounds of Boiled Crawfish and the only dish with a registered name, Crawfish Monica®. Cajun Crawfish Rice would make a nice side dish and don’t forget dessert, a savory Crawfish Strudel.

Oh, you were thinking sushi? How about a Spicy Crawfish Sushi Roll? It’s a crawfish world, folks.

Where do they get all their crawfish?

Good question... not sure where each vendor's source is, but it's all local, you can bet on that.
